Job Duties

Prepare and cook a variety of authentic Indian dishes, with a primary focus on tandoor and curry preparations.

Prepare authentic curry bases, gravies, marinades, sauces, spice blends, and masalas, ensuring appropriate balance of spices, consistency, flavour, and texture.

Control cooking temperatures, timing, moisture levels, and heat intensity to achieve the required quality and consistency of tandoori and curry dishes.

Create and follow recipes for ethnic food items such as Tandoori Malai Chaap, Tandoori Prawns, Tandoori Fish, Afghani Chicken Drumsticks, Lamb Kebab, Chicken Tikka, Achari Curry etc.

Prepare and marinate meats, vegetables, and other ingredients according to established Indian recipes.

Operate and maintain a commercial tandoor oven and prepare specialized items including naan, garlic naan, roti, tandoori chicken, chicken tikka, seekh kebab, fish tikka, paneer tikka, and other tandoori specialties.

Prepare a variety of Indian curries, including vegetarian and non-vegetarian dishes, using traditional spices, sauces, and cooking techniques.

Blend spices, curry bases, marinades, sauces, and other ingredients required for daily food preparation.

Monitor cooking temperatures, timing, consistency, taste, and presentation to ensure quality and authenticity.

Follow established procedures relating to food safety, sanitation, temperature control, cross-contamination prevention, and workplace health and safety

Stock inventory required to make tandoori items appropriately

Follow and execute chef direction for preparing dishes

Comply with nutrition and sanitation/hygiene regulations

Manage and train staff such as food servers, dishwashers and kitchen helpers.

Lead the kitchen helpers according to kitchen needs to avoid long wait times

Keep a track of the food stocks and other supplies, and maintain inventory according to avoid any disruptions in service

Assist in training and guiding junior kitchen staff in proper Indian cooking techniques, including tandoor operation, curry preparation, spice blending, and food-handling procedures.

Perform other related cooking and food-preparation duties as required by the employer.

Employment requirements

Completion of secondary school is required

4+ years years of commercial cooking experience with at least two year out of that as ethnic Indian cuisine cook is require

Ability to work in kitchen for extended hours

Strong knowledge of traditional Indian culinary techniques, particularly tandoor and curry preparation

Proven ability to operate and control a commercial tandoor oven safely and efficiently.

Knowledge of Indian spices, herbs, masalas, marinades, sauces, and curry bases, including their proper proportions and applications

Ability to maintain consistent flavour, aroma, texture, appearance, and presentation of prepared dishes

Ability to follow standardized recipes while applying appropriate professional judgment to maintain food quality

Ability to work flexible hours, including evenings, weekends, holidays, and peak restaurant service periods

Benefits

As per BC Employment standards act, 4% vacation pay of the gross salary will be paid each pay period with 10 days of unpaid vacation annually or the option to choose 10 days of paid vacation annually with no vacation pay on each pay period. Free meals on work during the work hours.
