Position: Japanese Speciality Chef (NOC: 6321)
Job Duties:
- Plan menus, determine size of food portions, estimate food requirements
- Create new recipes
- Supervise and instruct cooks on the preparing and cooking complete meals or individual dishes and foods according to the menu
- Supervise and instruct the preparing and cooking Japanese style dishes such as Katsu, U-don. Donburi, Karaage
- Supervise on preparing specialized homemade sauces for various types of Katsu
- Supervise on trimming and aging pork lion, pork tender, chicken, beef, fish for different Katsu
- Supervise on preparing specialized homemade Tsuyu (broth) for U-don
- Supervise baking and preparing breadcrumb for Katsu
- Supervise and instruct cooks on the plating and portioning for customer satisfaction
- Demonstrate new cooking techniques and new equipment to cooking staff
- Recruit and hire staff
- Supervise cooks and other kitchen staff
- Train staff in preparation, cooking and handling of food
Terms of Employment: Permanent Full-Time
Wage: $23.50/hr for 30 hours per week
Benefit: 10 day’s vacation
Qualifications/Skill Requirements:
Education: Completion of Secondary School
Experience: At least 5 years experience in Japanese food preparation
Language: Speak English, Read English, Write English
